Grilled Ribeye with Chanterelle Mushrooms and Spicy Hopped Autumn Ale: Goose Island Brewery at DC's Tico

Fall was in the air at our Chef Meets Brewer dining event that recently took over DC's tacos-meets-tapas eatery Tico, presented in partnership with Goose Island Brewery, as a part of their Migration Week series. Over a multi-course dinner with beer pairings, chef George Rodrigues teamed up with Goose Island's brewers to create an epicurean melding of beer and fresh seasonal flavors.
Chef Rodrigues worked with Goose Island to match the Goose Island Autumn Ale with a hearty grilled ribeye featuring local chanterelle mushrooms, fava beans, and Peruvian purple potatoes. "Chanterelle mushrooms have an earthy flavor that really brought out a subtle, almost-floral taste in the beer," said Goose Island's Jesse Valenciana. "The mushrooms gave off a hint of pepper that accentuated the underlying peppery notes from the hops in the Autumn Ale, adding an excellent layer of spice to the dish."
