The California-style taco shack Los Tacos No. 1 serves excellent, Tijuana-inspired versions of the usual suspects: tacos, tostadas, and quesadillas. But there’s also an item that isn’t on the menu: the queso taco, where the tortilla is replaced with a disk of fried cheese. "We first started doing it for our locals, for our customers that come three, four times a week," says co-owner Tyler Sanders.
