Oak-smoked brisket paired with the complex Matilda brew: Goose Island at Butchertown Hall

Our special Chef Meets Brewer dining event — thrown in partnership with Goose Island as a part of their Migration Week series — recently took over Nashville BBQ haven Butchertown Hall. Over a multi-course dinner with beer pairings, chefs at Butchertown Hall teamed up with Goose Island's brewers to create an epicurean melding of beer and barbecue unlike ever before.
The team at Butchertown Hall served up an oak-smoked brisket with a homemade tomato-based barbecue sauce that had just enough kick. Accompanied by sweet cucumber pickles and white onion for a cool crunch, the rich smokiness of the brisket was perfectly complimented by the layered flavors of Goose Island's Matilda Belgian Style Pale Ale.

"Immediately the slightly roasted malts in Matilda drove the smokiness in the brisket to the front of the palate," said Goose Island's Jesse Valenciana. "The subtle sweetness from the malts added another flavor dimension to the tomato-based sauce, but was cut into by the vinegary taste of the pickled cukes." Meanwhile, peppery notes on the finish of the Matilda complimented the heat of the meat — making for the perfect beer and BBQ pairing.
