If you forgot that you told your friend you’d bring a dish to the holiday party (or are running on a tight schedule and need something quick and easy) try this three-step artichoke caprese recipe. It’s impressive enough on its own, but simple enough to make in five minutes, with ingredients you likely already have in your fridge and pantry. That’s one easy way to win the holiday party circuit.
Wondering what to serve with the caprese? Try an ice-cold Coke Zero, which will balance the tartness of the balsamic.
Artichoke Caprese Recipe
Ingredients:
2 (7 ounce) jars of marinated artichoke hearts
2 tablespoons balsamic vinegar
2 tablespoons extra virgin olive oil
6 vine ripened tomatoes, sliced
1 pound fresh mozzarella, sliced
2 cups roughly chopped basil
Dash of Kosher salt and freshly ground pepper
Instructions:
Step 1: Drain the artichoke hearts.
Step 2: Whisk the balsamic vinegar and olive oil together.
Step 3: In a bowl combine the artichokes with the tomatoes, mozzarella, basil, salt and pepper and mix with the vinaigrette.
