Developed by Amanda Michael for BALMUDA, this simple breakfast makes the most of a delicate, artisan croissant — it’ll even make a supermarket croissant worth jumping out of bed for. Be sure to use BALMUDA The Toaster’s Pastry Mode, which lets you heat delicate bread like croissants without burning.

Ingredients - Serves 2

  • 2 croissants
  • 4 large eggs
  • 4 tablespoons crème fraîche
  • 2 tablespoons chives
  • 2 pinches salt and pepper
  • 0.7 oz butter

Directions - Ready in 20 min

  • Chop chives finely.
  • Slice croissants in half horizontally. Place in the toaster with the cut surface facing down and toast for 4 minutes on pastry mode. Make sure each croissant has ample space in the toaster — you may need to do two rounds of toasting, once for each croissant.
  • Crack eggs into a bowl one by one and whisk with crème fraîche until combined. Add chives, salt, and pepper.
  • Melt butter in a frying pan, pour in the egg combination, and scramble lightly with a fork until desired consistency.
  • Fold the eggs into an omelet.
  • Place the eggs on the bottom half of the croissants and top with the other half.

Apple and Cream Cheese Toast

This recipe combines crunchy toast with tart apples, and rich, smooth cream cheese for the perfect fall breakfast or snack that feels a little decadent.

Ingredients - Serves 2

  • 2 slices fruit and nut bread - Recommended thickness: about ½ inch thick.
  • 2 tablespoons cream cheese
  • 1/4 apple
  • 1 tablespoon sugar
  • 1 tablespoon lemon juice
  • Cinnamon, Butter, Walnuts, Maple syrup

Directions - Ready in 20 min

  • Cut the apple into thin slices. Combine with the sugar, lemon juice, and cinnamon. Set aside for 5 minutes.
  • Spread the cream cheese on the bread. Arrange the apple slices on top.
  • Scatter pieces of butter and finely chopped walnuts on top and toast on pizza mode for 4 to 6 minutes.
  • Transfer to a plate. Drizzle with maple syrup.

Eggs Baked in Chili Oil

Ingredients - Serves 2

  • 4 large eggs
  • 2 teaspoons olive oil
  • 1 teaspoon chili oil
  • Flake Salt
  • 2 teaspoons oil-packed sun-dried tomatoes, chopped
  • 6 slices baguette
  • Oregano
  • Italian parsley

Directions - Ready in 15 minutes

  • Pour in olive oil and crack eggs into oven-safe ramekins.
  • Add sun-dried tomatoes, flake salt, and chili oil into the ramekins.
  • Heat at 400℉ on oven mode for 1.5 minutes, then add baguettes. Switch to sandwich bread mode and cook for 3.5 minutes more.
  • Garnish with oregano and Italian parsley.

Avocado Toast

Avocado toast is a staple that somehow never feels basic. This recipe puts a fresh spin on the classic with a dollop of fresh, flavorful ricotta cheese — and the poached egg on top makes it even better.

Ingredients - Serves 2

  • 2 slices country sourdough bread
  • 2 eggs
  • 1 large avocado, pitted
  • 4 to 5 tablespoons fresh ricotta cheese
  • 1/2 lemon
  • 1 tablespoon white vinegar
  • 1 tablespoon chopped parsley
  • Salt and coarse black pepper
  • Extra virgin olive oil

Directions - Ready in 12 min

  • Fill a saucepan with enough water to cover the eggs (about 3 inches). Heat the water to a gentle simmer.
  • Toast two slices of bread on artisan bread mode for 3 minutes.
  • While the bread is toasting, scoop out the flesh of the avocado into a small bowl. Squeeze in the lemon and mash with a fork. Add a pinch of salt.
  • Add the white vinegar to the water in the saucepan. Crack the egg into a small dish and gently drop it into the simmering water. Poach about 4 minutes or until ready.
  • To assemble the toast, spread half of the avocado mixture on each piece of toast, add a layer of fresh ricotta, and place a poached egg on top.
  • Sprinkle chopped parsley on top, season with salt and pepper, and drizzle olive oil. Quickly sauté the cherry tomatoes with thyme and olive oil, and season with salt and pepper. Serve with the avocado toast.

Seed Toast with Almond Butter and Jam

  • 2 slices seed and nut bread, or whole grain bread, cut thick
  • 6 tablespoons almond butter
  • 4 tablespoons blackberry jam

Directions - Ready in 5 min

  • Toast the bread on sandwich mode for 4 minutes.
  • Thickly spread the almond butter across the toast and then top with blackberry jam.
