Recipe: A Color-Changing Take on the Classic Tom Collins

Who says traveling for work should involve tradeoffs? We partnered with Hilton Hotels & Resorts to design handcrafted cocktails inspired by the brand’s signature cocktail program, perfect for business hours that turn into happy hours!

Work trips can come with some pretty sweet perks, like staying at fun hotels and getting a taste of the local scene. If you absolutely must do some work while you’re living out your expense account dreams, make the most of it with a splurge of a cocktail.

We’re mixing up cocktails inspired by a new generation of business travelers, including this new twist on a classic Tom Collins. It changes color from blue to pink thanks to one magical ingredient: pea flower extract.

The Eater “Work From Hotel” Collins

Directions

Mix gin, St-Germain, and simple syrup in a carafe. Set aside.

Add a few ice cubes to a Collins glass. Pour contents of carafe over the ice.

Slowly pour in the pea flower extract, followed by lemon juice. Stir to combine.

Top off with soda water and garnish with cucumber, rosemary sprig, and edible flowers.
