This Is Your New Favorite Burger Condiment: Spicy Chipotle Mayo

When Matt and Emily Hyland opened up Emmy Squared, they made their name on pizza — and also burgers. Given the popularity of the restaurant’s burger, no doubt you should pay attention when the Hylands are grilling. Mix up their simple chipotle “secret sauce” now to change your burger game forever.

Burgers with Avocado and Cholula Chipotle Secret Sauce

Preheat grill to high heat.

For the sauce, mix together all ingredients and let sit in refrigerator for at least an hour before serving.

Form the beef into 8-ounce patties and season with salt (the more salt, the thicker the crust on the meat). Place on the grill and cook for about six to eight minutes on each side, or to desired temperature.

Meanwhile, slice the onion, lightly brush the slices with oil, and sprinkle with salt. Set them on the grill for about five minutes, until charred.

Melt the cheese on the burger and assemble with the sauce, onion, lettuce, and avocado. (If you’re in the mood, grill the buns too.)
